Kimchi Pancake - Kimchi Jeon
Makes: 2 pancakes or 1 big one

It’s easy, it’s quick and you probably have everything at home already! A great snack, side dish to share or to eat all by yourself. Nice and crispy on the outside, soft and chewy on and full of Oh Na Mi flavor the inside! Not only is it easy to make, but also very easy to adjust to your cravings by putting in all kinds of delicious additions.
Ingredients:
- 125g white flour*
- 120ml cold water
- 30ml kimchi juice or Oh Na Mi Kimchi Sauce
- 200g Oh Na Mi Original Kimchi (or our Bio Kimchi)
- 2 spring onions
- pinch of salt
- Neutral oil
- Sauce for dipping:
Oh Na Mi Korean Seaweed Sesame Soy Sauce
or
Oh Na Mi Kimchi Mayo
*traditionally the pancakes are made with just flour, but if you want them to crisp up nicely, substitute 25g with:
- 20g sweet rice flour (this also gives a nice chewy texture)
- 1 tbs cornstarch

Preparing the pancake
- Start by cutting the spring onion and the Oh Na Mi Original Kimchi in small pieces.
- Mix the flour, the water and the salt.
- Add in the Oh Na Mi Original Kimchi and spring onion.
Making the pancake
- Heat up a small layer of oil in a pan on medium to high heat.
- When the oil is hot, pour in half of the batter and fry it until the top is set (no more glistening wet spots).
- When the pancake releases from the pan and the bottom is crispy (3-4 minutes), sprinkle on a little more oil, especially on the middle. This will help it crisp up.
- Flip it an fry for another 1-2 minutes.
- Do this again for the second pancake.
- Put the pancake on a plate and cut it in to smaller pieces (chopstick grab-able) and serve with the spring onion and your dipping sauce of choice.

Troubleshooting and tips
- The mixture should glide off the spoon easily. Too thick? add some water. Too thin? Add some (rice)flour.
- How do ik know if my pan is hot enough? - Place a little batter in to the oil as it’s heating up. You’ll know it’s hot enough when the batter starts sizzling.
- Why is my pancake not releasing from the pan? - Try turning up the heat a little more OR use a flexible spatula to carefully slide it underneath.
- I made a big one, how do I flip it without breaking? - Try sliding the pancake on to a pot lid/plate, put your pan on top and flip them together.
- Why is my pancake not crispy in the middle? - You probably didn’t use enough oil, you need a generous amount for the pancake to become crispy
