Apple Marinated Gochujang Bulgogi

This Korean bulgogi comes with a twist... Just like our gochujang! Adding the apple in to the marinade works beautifully with the apple syrup in the gochujang. Sweet, tangy and a little spicy. A perfect side dish to share which is not only pretty to look at, but is also delicious and juicy!
Ingredients
Marinade
- 2 cm fresh ginger
- 3 cloves of garlic
- 1/2 sweet and sour apple
- 1 tbs sesame oil
- 2 tbs gochugaru
- 1,5 tbs Oh Na Mi Gochujang
- 1 tsp sugar
- 2 tbs apple cider vinegar
- 5 tbs soy sauce
- 400g pork shoulder
Kale
- 1 tsp sesame oil
- 2x1 tbs neutral oil
- 1 clove of garlic
- 2 cm of ginger
- 150g kale
- Salt and pepper
- 1/2 sweet and sour apple
Serve
- Oh Na Mi Original Kimchi
- Roasted sesame seeds
- Spring onion

Marinating the meat
- Put the peeled ginger, garlic and apple in a blender/food processor until it’s a puree.
- Pour it in to a container and mix in the other ingredients for the marinade, except for the meat.
- Cut off any bone from the meat and slice it in to thin strips.
- Add the meat in to the container with the marinade and make sure that all pieces are covered.
- Leave it to marinate for at least 45min, but preferably 3 hours.
Cooking the kale and the meat
- Cut the apple in to 1 by 1 cm chunks.
- Mince the garlic and ginger
- Heat up a pan on medium heat and add both the 1 tbs of neutral oil and the sesame oil. Once the oil is hot, add the ginger and the garlic to the pan.
- When the garlic and ginger turn golden, add salt and pepper to taste and cook until the kale wilts a little, this takes about 3-4 minutes.
- When the kale is done, take it out of the pan and put it on a plate.
- Heat the pan up again with another tbs of oil on medium heat.
- Add the meat and cook until it’s almost done, this takes about 4-6 minutes.
- Add in the apple and cook another 3 minutes.
Serve
- Put the meat on the kale
- Serve with Oh Na Mi Original Kimchi, roasted sesame seeds and spring onion.
- Optional is to serve it with some rice.
Troubleshooting & tips
- Why do I have to marinate it for 3 hours? - Marinating will give the meat the chance to soak up the flavors of the marinade.
- I don’t have a blender! - You can also chop it really fine. Cut small chunks and smash it with the blade of your knife before chopping it really small, it releases more juice!
